Currently running Parallels 9 (Windows 10, Windows 7, Windows XP, and Ubuntu 14.04). I am trialling Fusion 8.01 (previously ran Fusion in the 3/4 era and don't know why I left). While on Parallels, I copied my W7 VM and upgraded the copied version to W10 with ISO copy of W10.

I'm running Gwent on Linux, using WINE, so it's almost the same setup and Buying Kegs with Real Money Does't work. It's crashing game (probably because of GoG overlay) or just locking whole UI. Resizing the Window or Resolution of the game. Do work but maybe because I'm using very simple windows manager without any composite features.
Not sure how windows manager works on OSX but maybe there is some workaround for that. Friends match does not work (again, GoG overlay). Whole experience matches yours described in OP.
Also - regarding FINAL STEP - Launching Gwent, you don't have to run from GoG. You can just run it from Gwent executable to save couple of clicks and 500mb of RAM. You can run Galaxy with as win 7 application and gwent as win xp app (I mean you have to).
You can set windows version in winecfg (Applications tab) for every exe file separably. I'm using wine-staging 2.8 with CSMT enabled (Staging tab) for extra mega turbo 5fps performance boost. Clear wine 32 bit prefix, no additional garbage installed (with 2.8 you don't need any). EDIT: GoG is always trying to update while starting and always failing to do so but it's a common issue even on windows.
